International Dog Day Cupcake Recipe – Pumpkin Peanut Butter Cupcakes

Happy International Dog Day! What better way to celebrate the holiday than with our International Dog Day Cupcake Recipe? There are few things in this world that Jaz, our Marketing Agency’s Mascott, loves more than peanut butter – Which is why we opted to make her some Pumpkin Peanut Butter Cupcakes to celebrate the holiday. If you know a dog that loves peanut butter, these are the perfect treat for them! These cupcakes are delicious for humans too!

Pumpkin Peanut Butter Cupcakes (Serving Size: 9 Cupcakes)

Ingredients

  • 1 cup almond flour
  • 1 cup pumpkin puree
  • ¼ cup peanut butter
  • 2 tbsp. honey
  • 1 tsp. baking powder
  • 1 large egg

Frosting

  • ½ cup nonfat yogurt
  • ¼ cup peanut butter
  • Dog treats, optional topping

Directions

  • Preheat your oven to 350℉.
  • In a large bowl, mix the pumpkin puree, 1/4 cup of peanut butter, egg, and honey until well combined.
  • Stir in the almond flour and baking powder until the batter has a thick and even consistency.
  • Grease a cupcake tin with olive or coconut oil and fill each cup with batter; it should fill 9 cups total.
  • Bake the cupcakes until the center is firm; about 20 to 25 minutes.

In the meantime…

  • In a medium-sized bowl, mix together the fat-free yogurt and other 1/4 cup of peanut butter.
  • Once the cupcakes have cooled off, frost each one and decorate them with your dog’s favorite treat before serving!
